A Brief History Of Flavored Teas

Flavored teas is native to Southern China and Northern India and was first “discovered” about 5,000 years ago. Credit goes to Chinese Emperor, Shen Nung. Tea moved to Japan as Buddhism made it’s way from China. Portugal was the first European country to trade with China. They shipped their tea to Lisbon and then Dutch ships transported it to France, Holland, and the Baltic Countries. Flavored teas made its way to New Amsterdam, later re-named New York, in 1650. Great Britain was introduced to tea between 1652 and 1654. Iced Tea and Teabags were American inventions. Start searching for your favorite flavored tea!

Grading of Flavored Teas

Tea is generally, and roughly, graded on leaf size and style. This is, at best, an indicator of potential quality as, ultimately, the quality of any tea can only be judged in the cup.

D = Dust, or very small particles – used predominantly in commercial teas.
FNGS = Fannings – incrementally larger pieces of dust.
BOP = Broken Orange Pekoe – larger pieces of broken leaves. Many fine teas are available as BOP.
OP = Orange Pekoe – whole leaf teas.
FOP = Flowery Orange Pekoe – indicates the tea is the first open leaf, generally a positive attribute.
G = Golden – refers to the presence of the golden tips of the leaf bud.
T = Tippy – substantial presence of the whole leaf bud.
*Many teas are presented as TGFOP, which is generally considered to be the highest quality.
 

Green, Oolong, and Black Flavored Teas
• Green tea is not fermented at all
• Oolong tea is semi-fermented
• Black tea is fully-fermented

Variations
• Blended – blend of different teas or styles of flavored teas
• Scented – Black flavored teas scented with oils or botanical elements
• Flavored – Black teas flavored with fruit or spices
• Decaf - decaffeinated using ethyl acetate
• Tisane (herbal) – herbal “infusion”, no teas

• Tea contains polyphenols that can protect against some cancers – particularly intestinal cancer. Tea also contains Vitamins C and E.

Brewing and Tasting

Hot Tea by the Cup
• Teabag – 1 teabag for every 8 -12oz water. Steep for 5-6 minutes, or until desired strength
• Loose – 8/2oz, 12/3oz, 16/4oz, 20/5oz
• Black tea tastes best with water that is boiling
(the kettle is screaming at you)
• Oolong tea tastes best with water that is just off boil
(just before the kettle screams)
• Green tea tastes best with water that is
(in between the first steam and the scream)

Hot Tea by the Airpot
• 2.0oz (or to taste) for Green, Oolong, Black and Tisanes

Iced Tea by the Cup
For a 16oz cup:
• Steep 1 tea bag, or 1 Tablespoon of loose leaf tea in a tea infuser, in 8oz of hot water, for 5-7 minutes
• Fill a 16oz cold cup Ύ of the way with ice
• Discard tea bag, or infuser, and pour hot tea over ice
• Transfer the tea and ice back & forth, between the serving cup and another 16oz cup, until each cup is equally cold

Iced Tea by the Pitcher
• Steep 8 tea bags, or 1-1.25oz of loose tea in an infuser, in 64oz of hot water, for 5-7 minutes
• Remove tea bags, or infuser, and allow tea to cool at room temperature for 1 hour
• Chill tea in refrigerator
• Iced tea has a shelf life of 1 day

Iced Tea by the Pitcher – Cold Water Method
• Place 8 tea bags, or 1-1.25oz of loose tea in an infuser, in 64oz of cold water
• Steep tea, in the refrigerator, for 24 hours
• Remove tea bags, or infusers
• Keep tea refrigerated
• Iced tea has a shelf life of 1 day
